Date & Tahini Bliss Balls
Meditterranean asparagus and caper pasta

Just four ingredients, these Date & Tahini Bliss Balls are a great way to get healthy and energizing ingredients into your system while still appeasing the afternoon munchies, and the bonus is that the kids love them too. The addition of tahini means these bliss balls are very filling so one is usually enough – although I readily admit that no one in our house ever just grabs one! 

Date & Tahini Bliss Balls

Ingredients 
  • 200 grams dates 

  • 1 cup raw almonds 

  • 1 cup desiccated coconut 

  • ½ cup tahini (I use hulled but you could use unhulled too, just remember the flavour will be stronger)

  • Large pinch of sea salt  

  • Extra coconut for rolling 


Method 
  1. Place the dates into a heat proof bowl and cover with boiling water. Let sit for 15 minutes. 

  2. While the dates are soaking, place the almonds and the coconut into a food processor and blitz until fine. 

  3. Drain the dates, saving a few tablespoons of liquid in a small cup, and add them to the processer along with the tahini and salt. Blend until everything is combined, adding some of the date fluid if the mixture is stalling in the processor or seems too dry. Taste and add more salt if you want extra salted caramel vibes. 

  4. Roll into tablespoon sized balls and coat with extra coconut. Place in the fridge to set and store in the fridge in warm weather.
