Simple Stovetop Muesli
Meditterranean asparagus and caper pasta

The beauty of this recipe is in the ease of which a batch of muesli can be whipped up - I have been known to make this on a weekday morning in time for my teenage son to devour before he leaves for school - and unlike a lot of muesli and granola recipes it makes use of everyday pantry ingredients, so you won't have to go and buy elaborate selections of dried fruits and nuts.

In saying that, if you are blessed to have an abundant orchard and a dehydrator you may have a constant supply of dehydrated orchard fruit available to you. If this is the case you could come up with your own combinations of dried fruits, nuts and seeds and create your own flavour of muesli.


I like to use walnuts in this recipe as I always seem to have plenty on hand and I like the caramel flavour they lend when combined with the dates, but you could use cashews, almonds, macadamias, hazelnuts, or even peanuts, just play around with what you like.


It is not imperative that you use virgin coconut oil, but if you do it will impart a lovely flavour throughout the muesli, and it is of course a much healthier option than refined coconut oil.

Simple Stovetop Muesli

Makes 12 ½ cups 

​Ingredients 
  • 5 cups rolled oats

  • 2 cups thread coconut 

  • 2 cups dates, chopped 

  • 1 ½ cups nuts, chopped 

  • 1 cup raisins 

  • 1 cup seeds, pumpkin and/or sunflower 

  • ½ cup virgin coconut oil 

  • ½ cup honey


Method 
  1. ​Mix all the dry ingredients together in a large bowl.

  2. Melt the coconut oil and honey together in your largest pan over a medium heat. 

  3. Add the dry ingredients and stir well to coat with the oil and honey. 

  4. Toast the muesli over a low to medium heat while stirring gently by continuously bringing the muesli up from the bottom of the pan to the top. If you want chewy lumps in the muesli try not to break it up too much as you stir. Keep an eye on the heat so it doesn’t toast too fast. Continue in this fashion until the muesli is toasted to your liking – this should only take 5 minutes or so.  

  5. Allow the muesli to completely cool in the pan before transferring to a large container or glass jar. Store in your pantry.
