Sweet & Sour Tofu Baguette with Avocado & Tomato
If you can, try to source a traditionally made artisan baguette for this sandwich, and if it is sourdough that is even better. We are lucky as our neighbours make the most wonderful sourdough bread which they sell throughout our community, so we don’t have to go far to get the best baguette in town!Â

The creaminess of the avocado cuts through the punchy sweet and sour tofu, with the tomato and lettuce adding zing and freshness. You can add mayo if you like, but I prefer just a light spread of butter so as not to distract from the rest of the flavours within.Â

Enjoy as a substantial lunch for two, or as a light snack for three.Â
Sweet & Sour Baguette with Avocado & Tomato
Serves 2 hungry people or 3 for a light snackÂ
IngredientsÂ
For the sweet & sour tofuÂ
1 clove garlic, crushed and mincedÂ
½ teaspoon fresh ginger, finely grated or mincedÂ
1 small red chili, fresh or dried, finely slicedÂ
2 teaspoons honeyÂ
1 teaspoon rice wine vinegarÂ
2 tablespoons tamariÂ
2 tablespoons waterÂ
½ teaspoon sesame seedsÂ
1 teaspoon cornflourÂ
2 tablespoons peanut oilÂ
150 grams (half a packet) firm tofu, sliced into 6 slicesÂ
To assembleÂ
1 medium sized, freshly baked baguette, sliced in halve lengthwaysÂ
2 tablespoons soft butter OR vegan butterÂ
1 small OR ½ a large avocado, halved and slicedÂ
1 large tomato, slicedÂ
3 – 4 lettuce leavesÂ
Method
Make the sweet and sour dressing by mixing the garlic, ginger, chili, honey, rice wine vinegar, tamari, water, sesame seeds and cornflour together in a small bowl until fully combined.Â
Heat the peanut oil up to a medium heat in a frypan and fry the tofu until it is crispy on both sides. With the heat still on, add the dressing and gently mix it through the tofu until it bubbles and thickens. Remove from the heat and set aside.Â
Take the baguette and butter both halves. Place the avocado slices on the bottom half, season with a bit of sea salt and cracked pepper, and then put the tomato slices on, seasoning them too. Layer the tofu on the tomato, spooning the sauce over the tofu as you go. Finally place the lettuce on and top with the remaining baguette half.Â
Cut into 2 or 3 and enjoy. Â
